做法:春(chūn )笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
