做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
