做法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅(guō )盖焖。
