做法(fǎ ):春笋(sǔn )切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻炒(chǎo )均匀(yún )稍收汁时盖(gài )上锅盖焖。
