做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
