做法:春(chūn )笋切成(chéng )片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
