做法(fǎ ):春笋切成片后加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少(shǎo )量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
