做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖(mèn )。
