做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少(shǎo )量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
