做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
