做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
