做(zuò )法:春(chūn )笋切成片后加少许盐捞出(chū )后(hòu )用清(qīng )水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中(zhōng )火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
