做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
